1 rib celery, chopped
1 carrot, peeled and chopped
1 small yellow onion, chopped

- Fennel pollen
- 1 quart cider vinegar
- 1 1/2 cup granulated sugar
- 2 whole star anise
- 1 whole cinnamon stick
- 1 teaspoon whole peppercorns
- 1 medium purple top turnip, brunoised
- 1 shallot, brunoised
- 1 fennel bulb, brunoised
- 1/2 English cucumber, brunoised

Bravo's new season of Top Chef has a bit of a twist for the summer. Its cast is a who's who in the cooking world. From Art Smith (Owner of TABLE fifty-two in Chicago, and Art and Soul restaurant in Washington DC.), to Mark Peel (Owner of La Brea Bakery and Campanile, and owner of Smoke and Mirrors - set to open in Hollywood later this year), this season is stacked with seasoned professionals and recognizable names across the USA. |
